 Crispy Saltfish Fritters with Spices



Ingredients:

200g salted codfish

1 1/4 cups all-purpose flour

1/2 cup water

1/4 cup bell peppers (finely chopped)

2 spring onions (finely chopped)

1 small onion (finely chopped)

1 garlic clove (minced)

1 scotch bonnet pepper (finely chopped, seeds removed)

1/2 tsp ground black pepper

1/2 tsp paprika

1/2 tsp thyme (dried or fresh)

1/4 tsp baking powder

Vegetable oil (for frying)

Directions:

Rinse the salted codfish in cold water and then place it in a pot of boiling water. Boil for 20 minutes to remove excess salt.

Drain and rinse the fish again. Flake the codfish into small pieces, removing any bones.

In a mixing bowl, combine the flour, baking powder, black pepper, paprika, thyme, garlic, onion, bell peppers, spring onions, and scotch bonnet pepper.

Slowly add water to the dry ingredients while mixing to form a thick batter.

Fold in the flaked codfish, ensuring it's evenly distributed in the batter.

Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides (about 3-4 minutes per side).

Remove fritters from oil and place them on paper towels to drain excess oil.

Serve hot with your favorite dipping sauce.
