Lemon cake with mascarpone cream
Lemon Cake ingredients:
- 3 eggs 🥚
-a pinch of salt
- 150 grams of granulated sugar
- Lemon zest 🍋
- 80 ml of oil
- 40ml lemon juice 🍋
- 50ml of milk
-200 grams of flour 00
- 15 grams of yeast
Mascarpone Cream Ingredients:
-1 egg 🥚
- 4 tablespoons of granulated sugar
- 8 grams of vanilla sugar
- 2 tablespoons of cornstarch
- 100ml lemon juice 🍋
- 100ml of milk
- 1 tablespoon of butter 🧈
- 200 ml of sugar whipped cream
- 125 grams of mascarpone
- 3 tablespoons of powdered sugar
- Icing sugar to decorate
Procedure:
For the lemon cake:
1. In a bowl, beat eggs with a pinch of salt and ground sugar until you get a foamy texture.
2. Add grated lemon zest, oil, lemon juice and milk. Mix it up well.
3. Add the sifted flour with the yeast little at a time, and mix until you get a homogeneous compound.
4. Pour the compound into a 18/27 cm mold and bake in an oven at 180°C for about 35 minutes, or until the cake is golden brown and baked.
For the mascarpone cream:
1. In a casserole, mix the egg with the granulated sugar, vanilla sugar and cornstarch.
2. Add the lemon juice and milk, then cook over medium heat, stirring constantly, until the cream has thickened.
3. Add butter and stir until completely melted. Letting it cool in the fridge.
4. In a bowl whisk the sweetened cream and add the mascarpone and the icing sugar. Gently mix until you achieve a smooth and homogeneous cream.
crowd:
1. Once the cake and the cream are completely cooled, divide it in half and spread the cream with mascarpone.
2. Sprinkle sugar before serving.
