Ingredients
2 ½ cups shredded sweetened coconut
½ cup sweetened condensed milk
1 tsp vanilla extract
¼ tsp salt
1 cup powdered sugar
12 oz semi-sweet or white chocolate chips
1 tbsp coconut oil or shortening (optional)
Direction
Mix shredded coconut, condensed milk, vanilla, salt, and powdered sugar into a sticky dough.
Roll into 1-inch balls; place on a parchment-lined baking sheet.
Chill for 30-45 minutes.
Melt chocolate chips with coconut oil in the microwave, stirring until smooth.
Dip chilled coconut balls into chocolate; return to the sheet.
Let set at room temperature or refrigerate until firm.
Notes
Add flavor extracts like almond or peppermint for variation.
Garnish with sprinkles, shredded coconut, or crushed nuts for decoration.
