Ingredients:


1 1/2 cups shredded coconut

1 cup chopped pecans

1/2 cup unsalted butter

1 cup packed brown sugar

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

2 cups quick oats

Instructions:


Prepare the Base:


In a medium saucepan, melt the butter over medium heat.

Add the brown sugar, sweetened condensed milk, vanilla extract, salt, and cinnamon (if using). Stir to combine.

Bring the mixture to a gentle simmer and cook for 2-3 minutes, stirring constantly, until the sugar has dissolved and the mixture is smooth.

Combine the Dry Ingredients:


Remove the saucepan from the heat.

Stir in the shredded coconut, chopped pecans, and oats. Mix until all ingredients are well combined and evenly coated.

Shape the Cookies:


Line a baking sheet with parchment paper or a silicone baking mat.

Drop spoonfuls of the cookie mixture onto the prepared baking sheet. Use your hands or a spoon to shape each cookie into a round mound. Press down slightly to form a thick, praline-like texture.

Chill the Cookies:


Refrigerate the cookies for at least 1 hour, or until they are firm and set.
