Ingredients:


For the Chicken and Dry Rub:

2 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, or breasts)

2 tablespoons olive oil

2 tablespoons smoked paprika

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon black pepper

1/2 teaspoon salt


For the Alabama White Sauce:

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon prepared horseradish

1 teaspoon sugar

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste


Instructions:


Prepare the Dry Rub:

In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, black pepper, and salt. Rub olive oil over the chicken pieces, then generously coat with the dry rub, pressing the spices into the skin. Let the chicken sit at room temperature for 20-30 minutes, or refrigerate for up to 4 hours for deeper flavor.


Make the Alabama White Sauce:

In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, horseradish, sugar, garlic powder, and cayenne pepper (if using). Season with salt and black pepper to taste. Cover and refrigerate until ready to use.


Grill the Chicken:
