 Pineapple Christmas Balls



Ingredients:

- 398 mL canned crushed pineapple, thoroughly drained  

- 8 ounces cream cheese, softened to room temperature  

- 2 cups unsweetened fine desiccated coconut  

- 1/2 cup graham cracker crumbs  

- 3 ounces pineapple-flavored gelatin powder (dry)  


Directions:

1. In a large bowl, use an electric mixer to beat the softened cream cheese until it’s smooth and creamy.  

2. Add the drained crushed pineapple, 1 cup of desiccated coconut, graham cracker crumbs, and dry pineapple gelatin powder to the bowl.  

3. Mix everything together well until you have a uniform mixture.  

4. Cover the bowl and refrigerate the mixture for about 1 hour to firm it up for shaping.  

5. After chilling, scoop out portions of the mixture with a tablespoon, roll them into balls, and coat each ball in the remaining coconut.  

6. Place the Pineapple Christmas Balls in a food-safe container and keep them refrigerated until you're ready to serve.
