 Radish Chicken Soup



Ingredients:


1 whole chicken

1 large daikon radish, peeled and sliced

2-3 spring onions, chopped

1 piece of ginger, sliced

5-6 cloves of garlic, peeled

2 tablespoons of sake (optional)

Salt and pepper to taste

Dried goji berries (optional) 


Instructions:


Boil the chicken in a large pot of water for a few minutes, then remove and rinse to clean.

In the same pot, add fresh water, the chicken, daikon radish, spring onion, ginger, and garlic.

Bring the soup to a boil, then reduce the heat and simmer for about 20-30 minutes, or until the chicken and radish are tender.

If using, add sake and goji berries during the last 10 minutes of cooking.

Season with salt and pepper to taste.

Serve hot and garnish with fresh spring onions.
