 Spinach & Cheese Swirls



Ingredients:

    1 sheet puff pastry, thawed

    1 cup fresh spinach, chopped

    ½ cup ricotta cheese

    ½ cup mozzarella cheese, shredded

    ¼ cup Parmesan cheese, grated

    1 garlic clove, minced

    1 tbsp olive oil

    Salt and pepper to taste

    1 egg, beaten (for egg wash)


Directions:

    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    In a large skillet, heat olive oil over medium heat. Add the garlic and cook for 1 minute until fragrant. Add the spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

    In a bowl, combine the ricotta, mozzarella, Parmesan, salt, and pepper. Stir in the sautéed spinach mixture.

    Roll out the puff pastry sheet on a floured surface. Spread the spinach and cheese mixture evenly over the surface of the pastry.

    Carefully roll the pastry sheet into a log or cylinder. Slice into 1-inch pieces to form swirls.

    Place the swirls on the prepared baking sheet, spacing them evenly apart. Brush the tops with the beaten egg.

    Bake for 15–18 minutes, or until golden and puffed.

    Let the swirls cool for a few minutes before serving.
