Baked Lemon Pepper Chicken
Juicy and flavorful chicken seasoned with zesty lemon and freshly cracked black pepper, baked to perfection for a simple yet elegant meal.
Ingredients:
4 boneless, skinless chicken breasts
3 tablespoons olive oil
2 lemons (1 for juice, 1 for slices)
1 teaspoon lemon zest
2 teaspoons freshly cracked black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon salt
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 375°F (190°C).
In a small bowl, mix olive oil, lemon juice, lemon zest, black pepper, garlic powder, onion powder, paprika, and salt to create a marinade.
Place the chicken breasts in a large baking dish. Pour the marinade over the chicken, ensuring each piece is evenly coated.
Arrange thin lemon slices on top of the chicken breasts.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Let the chicken rest for 5 minutes before serving. Sprinkle with fresh parsley for garnish.
