Beef with potato

 

Delicious 😋Ingredients

2 pounds beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

4 carrots, sliced

4 potatoes, diced

4 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Brown the Beef:

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and pepper. Brown the beef in batches, ensuring not to overcrowd the pan. Remove and set aside.

Sauté Vegetables:

In the same pot, add onions and garlic. Sauté until onions are translucent.

Add carrots and potatoes, stirring for a few minutes.

Combine Ingredients:

Return the browned beef to the pot. Add beef broth, tomato paste, Worcestershire sauce, and thyme.

Bring to a boil, then reduce heat to low and cover. Let it simmer for about 1.5 to 2 hours, or until the beef is tender.

Serve:

Adjust seasoning with salt and pepper if needed.

Garnish with fresh parsley and serve hot with crusty bread or over rice.
