Burrata Bruschetta
Ingredients:
- 1 loaf of crusty bread (like baguette or ciabatta)
- 8 ounces burrata cheese
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Optional: balsamic glaze for drizzling
Directions:
1. Preheat your oven to 400°F (200°C). Slice the bread into 1/2-inch thick pieces.
2. Arrange the bread slices on a baking sheet. Brush each slice lightly with olive oil.
3. Toast the bread in the oven for about 8-10 minutes, or until golden and crispy.
4. While the bread is toasting, combine the halved cherry tomatoes and chopped basil in a bowl.
5. Drizzle the tomato-basil mixture with olive oil and balsamic vinegar. Season with salt and pepper to taste.
6. Once the bread is toasted, remove it from the oven and let it cool slightly.
7. Tear the burrata into pieces and place it on top of each toasted bread slice.
8. Spoon the tomato-basil mixture generously over the burrata.
9. Optional: Drizzle with balsamic glaze for extra flavor.
