 English Muffin Breakfast Pizza



Ingredients

4 English muffins, split in half (8 halves)

6 large eggs

1/4 cup milk

Salt and pepper, to taste

1 cup shredded cheddar cheese (or your favorite cheese blend)

1/2 cup cooked bacon bits, sausage crumbles, or diced ham

1/2 cup diced vegetables (e.g., bell peppers, tomatoes, spinach, or mushrooms)

2 tablespoons butter or olive oil

Optional: red pepper flakes, chopped parsley, or green onions for garnish

Instructions

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Toast the English Muffins:

Arrange the English muffin halves cut-side up on the prepared baking sheet. Lightly toast them in the oven for 5–7 minutes or until slightly crisp.

3. Scramble the Eggs:

In a medium bowl, whisk together the eggs, milk, salt, and pepper.

Heat butter or olive oil in a skillet over medium heat.

Add the egg mixture and cook, stirring gently, until the eggs are just set and slightly soft (they’ll finish cooking in the oven). Remove from heat.

4. Assemble the Pizzas:

Spread a spoonful of scrambled eggs onto each toasted English muffin half.

Sprinkle with shredded cheese.

Add your desired toppings (bacon, sausage, ham, vegetables, etc.).

5. Bake the Pizzas:

Return the baking sheet to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve:

Remove the breakfast pizzas from the oven and sprinkle with red pepper flakes, parsley, or green onions if desired. Serve immediately.
