Let’s Make It Happen:
Prepare the Meatballs:
Mix ground beef, breadcrumbs, egg, garlic, onion, cilantro, and spices in a bowl. Form into small meatballs.
Cook the Meatballs:
Heat a skillet over medium heat with a drizzle of oil. Brown the meatballs on all sides (cook in batches if needed). Remove and set aside.
Make the Sauce:
In the same skillet, sauté onion and garlic until softened. Add diced tomatoes, tomato sauce, spices, and broth. Simmer for 5 minutes.
Simmer Together:
Return meatballs to the skillet, cover, and simmer for 15 minutes, or until meatballs are cooked through and sauce thickens.
Serve & Enjoy:
Garnish with extra cilantro and serve with rice, tortillas, or over spaghetti squash for a lighter option.
Tips for Extra Magic:
Add a squeeze of lime for brightness just before serving.
Sprinkle queso fresco or shredded cheese on top for extra indulgence.
Serve with avocado slices or guacamole for a creamy touch.

These Mexican Meatballs are packed with flavor and perfect for tacos, rice bowls, or as a stand-alone dish. 🌮✨
