Ingredients:
4 large eggs
1 cup fresh spinach, chopped
1/2 cup red onion, finely chopped
1/2 cup feta cheese, crumbled
1/2 cup milk or cream
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil (for sautéing)
Fresh parsley or thyme (optional, for garnish)
Directions:
Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish or quiche pan.
In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for 2-3 minutes until softened.
Add the chopped spinach to the skillet and cook for another 2 minutes, until wilted. Remove from heat and set aside to cool.
In a bowl, whisk together the eggs, milk (or cream), garlic powder, salt, and pepper until smooth.
Add the sautéed spinach and onion mixture to the bowl and stir in the crumbled feta cheese.
Pour the egg mixture into the prepared quiche dish and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until the quiche is golden and set in the center.
Let it cool slightly before slicing and serving. Garnish with fresh herbs, if desired.
